I am a bereaved mother and wife. I began this blog to help me look for the "good things" in life after my daughter, "Babybear", died in July 2005. Three years later, her daddy, my husband, "Bear", died in November 2008. (You'll find a link to their stories on my blog) And now, as difficult as it is, I continue to look for the good things in my life as I learn my new normal with my pup, "Furrybear", at my side. So Yummy

If you should ever so happen to go to the Prairie Ink Restaurants located inside McNally Robinson's, I recommend you try their house salad, the Prairie Salad.

Over the weekend, while running errands, we stopped there for a bite to eat. I ordered the Prairie Salad and the Chicken Satay, which was equally as yummy. The salad is described in their menu as "a robust blend of field greens and leaf lettuce tossed with a citrus melon dressing. Topped with julienned carrots, cranberries, red onion rings, and sunflower seeds".

Friends, I tell you, this was one of the most delicious salads I've ever had! I may just have to go back and have some more!

I find myself craving salad alot during the summer when the vegetables are in their prime. I have been googling salad recipes. On allrecipes.com, I typed "salad" in their search box and they show the top 200 salad recipes, of which, I think 195 of them were potato salad. Who knew there was so many ways to make potato salad!

Sounds delicious! One of my favorites to make at home is a chicken taco salad.

We place precooked chicken strips in a frying pan; sprinkle with taco seasoning; add water to just cover the bottom. Cook over medium heat, stirring occasionally until all of the water is gone.

Mix salad greens, tomato, cheese in a bowl. Top with the chicken and crushed nachos. "Dress" with salsa & sour cream. :)

Good thing it's lunch time - because my stomach is now growling! LOL

Yum, Ter! That prairie salad sounds amazing! I went to a local tea house for a bridal shower/luncheon on Sunday and we had an amazing salad there, too! It was mixed greens w/ spinach, raisins, walnuts & a citrus vinaigrette. It was awesome! Let me know if you find any other good ones...too bad for me that my hubby doesn't like fancy salads - he's into the plain-Jane romaine (hey that rhymed, too!) with carrots, celery and onion...and maybe some broccoli or radishes...he won't do nuts or berries or dried fruit or even tomatoes on his :( boo...
